Eating cake that contains yogurt makes it sound really healthy...this lovely bundt cake recipe creates a soft moist sponge that is yummylicious. Although possibly not overly healthy it does make you feel good.
4 eggs
225g/8 oz caster/super fine sugar
125g/4.4 oz Greek yogurt (full fat or low fat)
125ml/4.2 fl oz vegetable oil
1 teaspoon vanilla extract
350g/12.4 oz plain/all purpose flour
2 teaspoons baking powder
1/2 teaspoon bicarbonate soda
Pinch salt
Preheat your oven to 180C/350F/Gas 4.
Grease and flour a large bundt cake pan. If you don't have a bundt tin, place an empty tin can in the centre of a large circular cake tin.
Whisk together the eggs and sugar until light and fluffy.
Add in the yogurt, oil and vanilla, mix until combined.
In a separate bowl mix together the flour, baking powder, bicarbonate soda and salt.
Add the wet ingredients to the dry and mix until fully combined.
Pour into the prepared pan.
Bake in the oven for 40-45 minutes.
I added some simple icing by mixing icing sugar with water and food colouring.
Variations:
Add in the zest of one lemon, lime or orange
Add a teaspoon of mixed spice, ground cinnamon or ground ginger
