Sometimes you just want an uncomplicated delicious cake, and this fits the bill.
560g (19 3/4 oz) plain/all purpose flour
1 teaspoon baking powder
1 teaspoon bicarbonate soda
1/2 teaspoon salt
225g (8oz) butter, softened
350g (12 1/2 oz) sugar
3 large eggs
2 teaspoons vanilla extract
120g (4 1/4 oz) buttermilk or plain Greek yogurt
120g (4 1/4 oz) sour cream or plain Greek yogurt
120g (4 1/4 oz) vegetable oil
Preheat your oven to 350F/180C/Gas 4.
Grease and flour a large bundt tin.
Mix together the flour, baking powder, bicarbonate soda and salt in a bowl and set aside.
In jug mix together the buttermilk, sour cream and oil and set aside.
In a mixing bowl cream the butter and sugar together until soft and fluffy. Add in the vanilla extract and whisk.
Slowly add in the egg a little at a time, beating well after each addition.
Now gradually add in the flour mixture and buttermilk mix, alternating a bit at a time. Mix until just combined.
Pour the batter into the prepared bundt tin, bake for 45-50 minutes.
Allow the cake to cool for 20-30 minutes before turning out.
Options:
Add in the zest of 2 oranges or 2 lemons
Add in a teaspoon of ground cinnamon or mixed spice
