Scone pizza base

We like a good homemade pizza here, but I ran out of time to make dough before dinner so I resorted to a scone mix. And we were not disappointed, in fact the general consensus seemed to be that it was better than usual pizza dough...


This makes enough for three small pizza bases (about 8" diameter each).





50g/2 oz margarine or butter

125g/4 oz self raising flour

1 teaspoon baking powder

1 teaspoon dry mustard

1 teaspoon salt

150g/6 oz grated cheese

1 teaspoon mixed herbs

2 eggs

2 tablespoons milk


Plus toppings of your choice and grated cheese.


I had some fresh wild garlic so I chopped that up and threw it in too.


Preheat the oven to 200C/400F/Gas 6.


Pop all the ingredients into a bowl and mix to form a dough.


Turn onto a lightly floured surface and shape into three 8/9" pizza bases. They don't have to be perfect circles.


Add your toppings; ham, pepperoni, bacon, mushrooms, sweetcorn, peppers or whatever takes your fancy (and yes, that includes pineapple) and then sprinkle with grated cheese. Don't overload with the toppings otherwise it won't cook through and you will end up with a soggy centre. Trust me...


Bake in the oven for 20-25 minutes.
