I had some leftover baked potatoes so looking for inspiration I found the idea of mashed potato quesadillas...
8 flour tortillas
2 cups mashed potato or 4/6 baked potatoes
1 onion, sliced
1 red bell pepper, sliced
1 fat clove of garlic, crushed
1/2 teaspoon cumin seeds
Salt & pepper
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
Olive oil
1 cup grated cheese (cheddar or vegan)
Saute the sliced onions, peppers and garlic in some olive oil for a few minutes adding in the cumin seeds and dried herbs.
If you are using baked potatoes mash them with the skins on (I popped them in the food processor).
Add the potato and salt and pepper to the pan giving it a good stir, saute on a low heat for a few minutes, remove from the heat and stir the grated cheese through.
Take one of the flour tortillas and spread some of the potato mix over it then add another tortilla on top and press down.
Carefully pop the filled tortilla into a dry non stick frying pan on a low heat and cook for about a minute, then very carefully flip it over and cook for a minute on the other side until nicely golden.
Remove from the pan slice into four and serve.
