We love Tex Mex in our house but I often find the bought flour tortillas/wraps a bit dry and way too big for using as soft tacos. The solution was to make my own and they are so easy to do. The result was soft delicious tortillas that can be made to any size you want (only limited by the size of your pan!).
300g/10.6 oz plain/all purpose flour, although I used wholemeal which worked well too
1/2 teaspoon salt
150ml/5 fl oz water
3 tablespoons vegetable oil (olive, vegetable etc, I used oilseed rape)
Mix the salt into the flour and then stir in the water and oil. Bring it together to form a dough, don't over knead. Add a little more flour or water if needed.
Let the dough rest for ten minutes.
Divide into ten portions for smaller soft tacos, or into 6 for larger tortilla wraps.
Roll each portion into a rough circle.
Warm a non stick pan or skillet.
Cook each tortilla over a medium heat until lightly browned, about one minute on each side. These cook quickly so don't take your eye off!
Keep warm and then serve.
