In the UK we have a delicious syrupy oatmeal cookie called a 'hobnob' which are yummy on their own but excellent to dunk in your tea. This is a recipe to make your own.
150g (5 1/4 oz) caster sugar
150g (5 1/4 oz) butter
1 tablespoon milk
2 tablespoons golden syrup (corn syrup)
150g (5 1/4 oz) self raising flour
1/2 teaspoon baking powder
115g (4 oz) oats
Preheat your oven to 300F/150C/Gas 2.
Line a baking sheet with parchment.
Mix the sugar and butter together until light and fluffy.
Add in the milk and golden syrup and mix until combined.
Stir in the flour and baking powder.
Now fold in the oats.
Pop the mixture into the fridge for ten minutes.
Drop balls of the dough onto the baking sheet leaving space for them to spread. You will get about 15-20 cookies.
Bake in the oven for 25 minutes until golden brown.
Leave to stand for ten minutes to set before removing from the tray.
Options:
Add a teaspoon of ground ginger, mixed spice or cinnamon.
Once the cookies are cold drizzle them with melted chocolate.
Add in a handful of sultanas or chopped dried fruit.
