I had some left over chocolate from Yule (I know...unheard of, but there are often the odd bits and bobs that aren't favourites left in the tin). So I wanted to use them up, this is the perfect recipe.
115g/4 oz butter
200g/7oz light brown sugar
2 large eggs
1 teaspoon vanilla extract
1 teaspoon salt
1 teaspoon baking powder
185g/6 1/2 oz plain/all purpose flour
300g/10.5 oz chocolate, caramel chocolate bars, whatever you have! Chopped.
Preheat the oven to 180C/350F/Gas 4.
Line a 7x10" baking tin with parchment paper.
Melt the butter (I do this in the microwave).
Cream the butter and brown sugar together until smooth.
Gradually beat in the eggs a little at a time.
Stir in the flour, vanilla, salt and baking powder until combined.
Melt the chocolate/caramel/whatever you are using and fold this into the batter.
Spoon the batter into the tin and spread evenly.
Bake for 25 to 30 minutes, don't over cook. The top will be set and the edges brown.
Allow to cool then slice.
