At the request of my husband, who asked for golden syrup cake, these are absolutely lush. Be warned they do provide a total sugar rush...
185g/6 1/2 oz butter, softened
55g/3 tablespoons golden syrup
150g/5 oz caster sugar
185g/6 1/2 oz self raising flour
3 large eggs
2 tablespoons milk
Icing
110g/4 oz butter, softened
200g/7 oz icing sugar
2 tablespoons golden syrup
1 tablespoon milk
Few drops food colouring (optional)
Preheat the oven to 180C/350F/Gas 4.
Whisk the butter and sugar together until light and fluffy.
Add in the golden syrup, caster sugar, flour, eggs and milk. Mix together until combined.
Spoon into 12 muffin cases.
Bake for 20 minutes.
Remove from the oven and allow to cool.
To make the icing, whisk the butter and icing sugar together until soft and light. Add in the golden syrup and milk, which until combined.
Pipe onto the cakes.
Add sprinkles if you would like.
