Always on a mission to keep the teenager in our house fed, these chocolate cookies scored a very high 8/10 from him. (Believe me, that's a good score).
225g (8oz) butter, room temperature
300g (10 1/2 oz) sugar
2 teaspoons vanilla extract
2 eggs
3 tablespoons milk
400g (14 oz) plain/all purpose flour
60g (2 oz) cocoa powder
1 teaspoon bicarbonate soda
1/2 teaspoon salt
340g (12 oz) chocolate chips - I use a mixture of plain, milk and white
Preheat your oven to 350F/180C/Gas 4.
Line two baking sheets with parchment.
Cream the butter, sugar and vanilla together until light and fluffy.
Gradually add in the eggs a little at a time, beating well after each addition.
In a separate bowl mix together the flour, cocoa powder, bicarbonate soda ad salt.
Now gradually add the flour mix to the butter mix, adding in the milk as you beat.
The dough will be thick and a little sticky.
Stir in the chocolate chips.
Drop balls of the dough onto the prepared baking sheets, leaving space for them to spread a little. You should get 20-24 cookies.
Bake for 8 minutes and leave to cool before removing to a rack.
Option
Replace half the chocolate chips with chopped nuts
