Our teenage son demolishes chocolate cookies by the dozen so I am always testing new recipes, this one has the option of being vegan too.
115g/4 oz butter (you can use vegan butter or coconut oil)
225g/8 oz sugar
1 teaspoon vanilla extract
1 tablespoon ground flaxseeds
65g/2.3 oz milk (you can use plant based)
225g/8 oz plain/all purpose flour
60g/2.1 oz cocoa powder
1 teaspoon bicarbonate soda
Pinch salt
100g/3.5 oz chocolate chips
Preheat your oven to 350F/180C/Gas 4.
Line a baking sheet with parchment paper.
Melt the butter then add to a large bowl along with the sugar, mix.
Stir in the vanilla extract, flax seeds and milk until combined.
Add in the flour, cocoa powder, bicarbonate soda and salt, mix to combine.
The dough will be stiff.
Fold in the chocolate chips, saving a few to decorate the top.
Take a couple of tablespoons of the mix and roll into a ball, place on the prepared baking sheet and flatten the top, add a chocolate chip if you wish.
Continue this process until you have used up all the dough.
Bake for about 10 minutes. They will seem a little squishy, they firm up as they cool.
