Chocolate cookies squished together with yummy buttercream, result!
113g butter, diced
340g dark chocolate chips
120g light brown sugar
100g sugar
2 large eggs
1 egg yolk
1 teaspoon vanilla extract
225g plain/all purpose flour
1 tablespoons cocoa powder
1 teaspoon cornflour/cornstarch
1/2 teaspoon baking powder
1/2 teaspoon bicarbonate soda
1/2 teaspoon salt
Buttercream:
113g butter, softened
200g icing sugar
Pinch salt
1-2 tablespoons milk
1 teaspoon vanilla extract
Preheat your oven to 350F/180C/Gas 4.
Line two cookie sheets with baking parchment.
Pop the butter and chocolate chips into the microwave for 30 seconds, stir and repeat until the chocolate and butter are completely melted. Allow to cool slightly.
Stir in the sugars, eggs and vanilla.
In a separate bowl mix together the flour, cocoa powder, cornflour, baking powder, bicarbonate soda and salt.
Gradually stir the flour mixture into the butter mixture until combined.
Drop spoonfuls of cookie dough onto the prepared baking sheet (about 1 tablespoons size).
Bake for 8-10 minutes, allow to cool.
To make the buttercream, whisk the butter until light and fluffy, whisk in the icing sugar, salt, vanilla and milk until smooth.
Pipe or spoon a dollop of buttercream onto a cookie and sandwich it together with another, repeat until all the cookies are used up.
