Sometimes all you need is a big savoury hit of cheese, these answer the call.
170g/6 oz cheddar cheese, grated plus extra for sprinkling
57g/4 tablespoons butter, room temperature
110g/3.9 oz plain/all purpose flour
1 teaspoon salt
1/2 teaspoon paprika
1-3 tablespoons milk
Sea salt to sprinkle
Preheat your oven to 350F/180C/Gas 4
Line your baking sheet with baking parchment paper.
In a large bowl mix together the cheese, flour, salt and paprika.
Dice the butter and add to the flour mixture.
With your fingers or in a processor mix together until it resembles the texture of breadcrumbs.
Add the milk a tablespoon at the time, you might not need all of it. Mix and bring together to form a dough.
Lightly flour a flat surface and roll out the dough, it needs to be fairly thin, about 1/8".
cut into circles or shapes with a cookie cutter.
Place on your prepared baking tray.
Sprinkle the top of each one with a pinch of grated cheese and a sprinkle of salt.
Bake for 12-15 minutes until the edges are just slightly browned.
