I needed something in bread form to go with dinner but didn't have time to make full on yeasted bread. The answer was this cheese and onion soda bread. Quick to make and oh so delcious.
400g/14 oz plain/all purpose flour
1 teaspoon bicarbonate soda
1 teaspoon salt
Black pepper
1 level teaspoon mustard powder
1 bunch spring onions (scallions), chopped
125g/4.4 oz cheddar cheese, grated
300ml/10.1 fl oz buttermilk or 200g natural yogurt mixed with 100ml milk
Handful of grated cheese to top
Preheat your oven to 400F/200C/Gas 6.
Line a baking tray with parchment paper or a dusting of flour.
Mix the flour, bicarbonate soda, salt, a generous grinding of black pepper, the mustard powder, spring onions and grated cheese together.
Add in the buttermilk and bring it together to form a soft dough.
You may need to add a little extra milk.
Shape into a round (about 18cm in diameter).
Cut the round into quarters with a sharp knife, taking the cut almost all the way through the dough.
Sprinkle a handful of grated cheese on top.
Bake for 35-40 minutes.
