Proper comfort pudding...
3 large eggs
80g/2.8oz sugar
1 teaspoon vanilla extract
1/4 teaspoon salt
19.2 fl oz/1 pint warm milk
Ground nutmeg
Preheat your oven to 350F/180C/Gas 4.
Beat the eggs, sugar, vanilla extract and salt together.
Gradually pour in the milk, whisking continuously.
Pour into a large ovenproof dish.
Sprinkle grated nutmeg over the top.
Place the dish into a large roasting tin in the oven. Pour boiling water into the roasting tin so that it comes 3/4 of the way up to the top of the dish. (Creating a bain Marie/water bath).
Bake for 45-60 minutes, until set.
